Perilla Dalle Ezay
A chilli paste made of perilla’s mixed with spicy chillies known as dalle that is grown in Southern Bhutan, along with Sichuan pepper and refined oil.
Perilla, known locally as Zhimtsi, is an age-old traditional ingredient in Bhutanese food providing a flavoursome condiment at mealtime. They are grown in Nangkor Gewog in Zhemgang Dzongkhag.
