How to Brew Butter Tea (Suja)

Making authentic Bhutanese butter tea is a ritual as much as a recipe. Here’s how to prepare it the traditional way:

  1. Boil the leaves: Add 1–2 tablespoons of Zang JA butter tea leaves to 3–4 cups of water. Simmer on low heat for 15–20 minutes until the brew turns a deep reddish-brown colour.
  2. Strain: Pour the brewed tea through a strainer into a blender or traditional Bhutanese churn (dongmo).
  3. Add butter & salt: Add 1–2 tablespoons of unsalted yak butter (or regular unsalted butter) and a pinch of salt to taste.
  4. Blend: Blend or churn vigorously for 1–2 minutes until the tea becomes creamy, smooth, and frothy.
  5. Serve hot: Pour into a cup and enjoy immediately. Butter tea is best served piping hot.

Tip: Adjust the amount of butter and salt to your preference. Some enjoy it richer; others prefer a lighter brew. You can also add a splash of milk for a creamier texture.
